IWBNI there were an option that could be used to override any default font for a given staff.

For example, in a score consisting of staves of various sizes, this feature would allow one to design and use a family of music fonts where each font in the family has been tailored to be used for a particular staff size.

This could be implemented by replacing the checkbox called Notehead Font (and its associated Select button) in the Independent Elements section of the Staff Attributes dialog box, with a button called Default Fonts. This button would display the Select Default Fonts dialog box.
